Beet, cucumber and radish gazpacho

 

Ingredients: 

- 1 bag of beets

- 1/2 cucumbers

- 6 radishes

- 2 tablespoon of light cream

- Parsley, optional

- 1 clove of garlic, 1 small white onion

- 1 dash of balsamic vinegar

- Salt and pepper

 

Preperation  :  

 

Peel the cucumber, garlic clove and onion.
Wash the radishes.
Dice the beets, cucumber and radishes.
Mix all the ingredients.
Pour into verrines and refrigerate for 1 hour.
