Egg toast, salsa and feta

2 slices of bread
Olive oil
2 eggs
1 pinch of salt
1 pinch of pepper
60ml salsa
30 ml crumbled feta cheese

Using a cookie cutter, cut a circle in the center of each slice of bread; set the circles aside.
In a large non-stick skillet greased with olive oil (strain the oil with paper towel), cook the slices of bread until lightly browned (1 to 2 minutes). Turn the slices over and crack an egg in the hole in each of the slices.
Season the eggs with salt and pepper. Cover and cook until the whites have seared and the yolks are cooked as desired (2 to 4 minutes). Place on plates.
Toast the pieces of bread set aside for 1 minute per side or until golden brown. Top the eggs with salsa and feta. Serve with the pieces of toast and lamb's lettuce or whatever.
