How to cook more dairy products?
Next week is fast approaching and you don't know how to cook light with more milk? For you, this celebration rhymes with pasta with sauce, cheesecake and fatty cheeses…. and yet :)
Here are my few easy-to-make recipes for you to face this holiday lightly.
First start by favoring light cheeses and avoiding cheeses with the highest calories.

1. As an aperitif: Start your meal with light aperitifs that young and old will love

Cherry tomatoes stuffed with goat cheese
Ingredients:
100 g of goat cheese
1 handful of chopped fresh basil
1/2 teaspoon of salt
1/2 teaspoon of black pepper
20tons of cherry tomatoes
Preperation:
In a salad bowl, combine the goat cheese, basil, salt and pepper with a fork.
Cut the cherry tomatoes in half, drain them and fill them with about a teaspoon of the preparation
Arrange them on a dish and serve
You can also make this preparation with 0% cream cheese

2. As a flat:
Mushroom gratin
Ingredients:
250g of white cheese 0%
400 g fresh button mushrooms
1 large onion
2 tablespoons of flour
2 tablespoons of olive oil
1 egg
Salt, pepper and nutmeg
Preperation:
Preheat your oven.
In a non-stick pan, brown your onions with the mushrooms. Add salt, pepper and nutmeg.
Once this preparation has cooled, add the cheese, flour and egg. Mix everything.
Put everything in the oven at 160 degrees or thermostat 6, for 45 minutes.

3. As a flat:
Salmon-spinach quiche
Ingredients for 4 persons) :
300 g frozen chopped spinach
2 eggs
300 ml of skimmed milk
1 tsp of nutmeg
1 ready-to-use shortcrust pastry (230 g)
125 g of salmon steak
A little grated cheese
Salt pepper
Preperation:
Cook the spinach in a non-stick, fat-free skillet.
In a bowl, beat the eggs into an omelet. Add the milk and grated nutmeg.
Salt, pepper, mix.
Place the dough base in a mold. Evenly distribute the drained spinach and the diced salmon.
Pour over the egg and milk mixture. Sprinkle with grated Emmental.
Bake for 35 min at 210 ° C (Th. 7). Serve hot!

4. For dessert:
Light cheesecake
Ingredients:
100G of white cheese 0%
1 egg
20 g of whole wheat petals
15 g dark chocolate pastry 4 chocolate squares
5 g of cornstarch
2 teaspoons of special cooking sweetener
2 cm of vanilla pods
Cinnamon
Preperation :
Preheat the oven to 180 ° C (th. 6).
Put the cereals in a plastic bag and crush them using a rolling pin.
Melt the dark chocolate with a small amount of water for 30 seconds in the microwave. Add the pinch of cinnamon and mix with cereal.
Line a small ramekin with parchment paper. Spread the crispy chocolate and cereal pie shell using the back of a spoon. Flatten well.
Place the ramekin in the freezer while you prepare the filling.
Split and scrape the vanilla pod. Mix the grains with the fromage blanc.
Separate the white and I egg yolk and whisk the yolk with the sweetener. Add the cornstarch and mix well.
Beat the egg white until stiff, add delicately to the previous preparation, taking care not to drop it.
Take out the ramekin and add this preparation on the solidified crispy bottom.
Bake for about 30 minutes.
Let cool, then place the ramekin overnight in the refrigerator. The next day, before tasting, unmold the cheesecake on a small plate. Enjoy your lunch !
5. For dessert :
Brownie way
Ingredients:
1 plain yogurt 0%
15 g dark chocolate
15 g of almonds or walnuts
1 cm of vanilla pods
1 tablespoon of sweetener
Preperation:
Crush nuts or almonds
Stir the yogurt until you get a smooth texture
Split the vanilla pod and add walnuts or almonds.
Melt the chocolate with 2 tablespoons of water and cinnamon
In a verrine: Alternate between cheese and chocolate: 1st layer: fromage blanc, 2nd layer, chocolate, 3rd layer: yogurt, 4th layer: chocolate….
We will keep it for an hour in the freezer.

You can also make homemade spinach and ricotta tortellini. This cheese is low in lipids and carbohydrates so cook with it without eating the quantity at the risk of canceling its effects. Make quiches without dough :
Ingredients for 1 person:
• 1 egg
• 10 g of cornstarch
• 150 ml of skimmed milk or soy milk
• 50 g of dry skinned ham or charcuterie yarden 2 percent fat
• Salt pepper
Preperation :
• Preheat the oven to 210 ° C (th.7).
• Beat the egg with the milk, add the flour, salt and pepper.
• Cut the ham into thin strips.
• Distribute the mixture in 1 individual mold or ramekin going to the oven, cook for 45 minutes in a hot oven.
