Tomato mozzarella chicken cutlet
4 chicken cutlets
2 balls of mozzarella (forgot to buy, I replaced with light grated cheese)
1 large tomato or 2 small
1 tsp. tablespoon olive oil
Preheat the oven to 200 ° C.
Rinse the tomato and cut it into slices. Drain the mozzarella and cut it into slices as well.
Heat the olive oil in a pan and brown the cutlets for 2 minutes on each side.
Place them in a baking dish. Arrange the tomato and mozzarella slices on the chicken cutlets. Salt, pepper and sprinkle with Provencal herbs.
Bake for about 15 minutes, basting occasionally with the cooking juices.
