Poached eggs served on asparagus


Recipe for poached eggs served with asparagus and tomatoes



2 tomatoes

3-4 Asparagus 

1 or 2 egg (s)



Cut the tomatoes into slices  


Prepare your asparagus:  Point  asparagus.

Bunch the asparagus by tightening them with a string, this will prevent  the

during cooking. The technique is to soak the asparagus in a bowl of water

cold. Bring water to a boil with coarse salt. Cook your asparagus 

for 6 minutes. Rinse them in an ice-water bath. Drain them well.  


Prepare your poached egg: Bring water to a boil in a saucepan. Add a 

tablespoon of white vinegar. Add your egg delicately and cook the egg 

2 minutes.
