Recipes for this winter:

Soups without starch

 

 

Carrot soup  

Ingredients: 

- 1 tablespoon of olive oil 

- 4 carrots, peeled and cut 

- 1 small onion cut into cubes 

- 1 cube of vegetables 

- Herbs and spices you want: fresh coriander for example  

Preperation: 

- Make  cook the carrots and onion with olive oil in a large saucepan,  medium heat.

- As soon as the onion begins to soften, add the cube of vegetables and the herbs and spices. 

- Bring to a boil for about 10 minutes 

- Let cool before stirring with a blender or food processor 
- Easy and light recipe ... and Bon Appétit! :-)  

Leek and cauliflower soup  

Ingredients: 

- 1 tablespoon of olive oil 

- 3 leeks, cut 

- 1 cauliflower, cut into pieces 

- Finely chopped garlic 

- 1 cube of vegetables  

Preperation: 

- Heat the oil in a large saucepan and sauté the vegetables with the garlic for 10 minutes. 

- Add the cube of vegetables and let bring to the boil. 

- Bake for 45 minutes 

- Let cool before stirring with a blender or food processor 
- Easy and light recipe ... and Bon Appétit! :-)  

Mixed vegetable soup, recipe  granny Jo

Ingredients: 

- 2 leeks 

- 4 carrots 

- 4 fennels

- 3 zucchini 

- 1 bunch of coriander  

Preperation: 

- Wash and cut all the vegetables and put them to cook 

- At the end of cooking, add the bunch of coriander 

- When it's cooked, let cool and mix
- Easy and light recipe ... and Bon Appétit! :-)  

Onion soup  

Ingredients: 

- 1 kg of onions 

- 150 ml of dry white wine 

  - 1 broth  defatted poultry cube 

- A few thyme and bay leaves  

Preperation: 

- Peel and finely chop the onions 

- Sweat them dry for 10 minutes over medium heat

- Deglaze with the white wine and reduce by half. Let the wine evaporate. 

- Add the poultry broth (water, broth and cube)

- Add the thyme and bay leaf 

- Simmer 45 minutes over medium heat and mix when the soup is cold
